    Super-Simple Friday Night Meatballs
    Yummly
So many readers asked for the meatball recipe from my husband, Joe Cleffie, that we had to oblige. After making a few small tweaks for foolproofing and streamlining, we're proud to present it here. This isn't the most complicated meatball recipe around—quite the opposite, in fact. Our goal here is a recipe that anyone can make, no practice required, and get great results. I hope it inspires a thousand dinners in communities worldwide.
Aretha Franklin's Queen of Soul Ham
    Food.com
If you're reading this on a Friday and you're like me, you'll be in the grocery store tomorrow, so today I'll give you ingredients for a recipe for Sunday dinner. How about Aretha Franklin's Queen of Soul Ham? I got this recipe a few years ago when Aretha was on Martha Stewart, B.I. -- Before Incarceration :-P Aretha said on the show that soul can be a lot of things to a lot of folks -- it's a feeling. When you cook, you should put your soul into it -- people will taste the difference (trust me on this one). Now my notes on this one -- I'm giving you Aretha's original recipe for the whole bone-in ham; however, you can achieve the same effect with a couple of ham steaks on a Tuesday night in a shallow baking pan. Just eyeball all the ingredients, switch the whole cloves for clove powder and reduce the amounts of the remaining ingredients so you don't end up with a brown sugar fruit platter! Also -- I just could not put coconut on my ham. Eww... but if you like the idea, go for it! Oh -- and I used dark brown sugar. Light is for babies...lol!

    Curried Lentils with Quick-Pickled Veggies
    Food52
This recipe lends itself to a week's worth of filling vegetarian lunches; I recommend making it on Sunday and partitioning the lentil/quinoa mix into portions, then keeping the pickled vegetables in a separate container at work. That way, you can heat up the lentil mix, then top it with a riot of color. Your coworkers will be jealous. Tips: The lentil mix will keep easily for a week, but the pickle will start to wilt after about 2-3 days. If you intend to eat this Monday through Friday, I recommend making two smaller batches of pickle - one on Sunday night, one on Wednesday evening. The quinoa should be pre-cooked, and quinoa is a grain that keeps well when cooked. I recommend cooking more than you need and using this protein-laden grain in a few dinners, or stirring it into oatmeal in the morning. The goat cheese adds a lovely tangy, creamy flavor to this dish, but can easily be left out to make this vegan. I would recommend replacing the flavor with additional spices and a little coconut cream.

    Red-Hot Cajun Blue Cheese Wings
    Food.com
These wings are absolutely delicious! They have just the right amount of spiciness along with the balance of flavor from the blue cheese. This recipe is definitely a winner. Great for parties, Friday or Saturday night dinners or any occasion. Note: You can substitute for any hot sauce that you like, I love to use Franks red hot sauce. Also, cooking time is not exact, it depends on how your frying and how many wings you do at a time.
