real answer: Beerus is going to be stronger than Goku until Toriyama decides it's no longer necessary. so it doesnt matter how many new abilities, transformations or powers Goku gets, hes going to artifically remain behind Beerus until the man decides so.
We'll never see Dragon Balls in tournament unless 1 player is specifically going for em, and we'll hardly see dramatic finishes unless players are actively trying to trigger them (and they can even avoid them by avoiding certain stages).
