    Potato salad is said to have been introduced to Japan more than 125 years ago. Today, it’s as ubiquitous there as it is in the States, but the Japanese version is quite different from what we’re accustomed to here. It always contains mayonnaise, and Japanese mayonnaise, which is richer and tangier than American mayo, is key. There’s also not as much vinegar, so the flavor is sweeter and less acidic. That sweetness is amplified by the addition of various vegetables, such as corn, carrots, peas and cucumber, which also lend texture. Ham, onions, scallions and hard-boiled egg are also common mix-ins, but there are no rules, so use what you have and like. Lastly, the consistency is closer to that of mashed potatoes--creamy, not chunky. Serve it as you would any potato salad. It’s a staple in bento boxes, too.

    I got this delicious recipe for Okonomiyaki from my friend Mayumi, who is from Osaka. Okonomiyaki is basically a savory vegetable and meat pancake that is topped with 2 kinds of sauce: Okonomi sauce, which is similar to Worcestershire sauce but is thicker and sweeter, and Mayonnaise - the mayonnaise used on okonomiyaki is a Japanese brand called Kewpie. It is a bit thinner and more tangy than the mayo sold in the US. Many people call Okonomiyaki "Japanese Pizza", which is a translation that doesn't really work, frankly. It is round, hot, and you choose what sort of meat you want to put in it; but that's pretty much where the similarities end. You can use whatever sort of meat you'd like in these, the most common is pork and/or shrimp; but you could use chicken or bacon or squid or anything, really. There are some ingredients in this recipe that you will need to get from a Japanese grocery store. If you don't have one in your town you can order them from Amazon.com - they sell the Okonomi sauce, Kewpie Mayonnaise, and an "Okonomiyaki Kit" which has Bonito Flakes and the mix for the batter in it. Weirdly, the kit does not have the two sauces in it. Tenkasu are crunchy bits of fried flour and they are also called Agedama. If you can't find them just leave them out. Nagaimo is a type of Japanese yam. If you can't find it you can just leave it out. Do not try to use the yams we have here in the US - it's a very different type of yam. If you can find the Nagaimo, when you grate it it will have a very runny, sticky texture, kind of similar to egg whites. I chop the cabbage, green onions, kimchee and pickled ginger all at the same time in my Cuisinart - it goes much quicker that way. You can make 1 large pancake or 2 smaller individual servings. I like to do 2 because they are easier to flip that way! Whew! Anyway, I hope you enjoy your Okonomiyaki! It is delicious and also a good way to get kids to eat some cabbage ;) *NOTE*: the Recipezaar computer doesn't recognize a lot of the ingredients in this and won't let me put them in the "Ingredients" area, so I am listing them here: Where it says "1 cup flour", it should say 1 cup Okonomiyaki mix. Also, these are needed: 1/2 cup Nagaimo, peeled & finely grated; 1/2 cup kimchee, finely chopped; 1/2 cup Tenkasu.

    I have never been a big fan of mayonnaise. Then, it occurred to me that I might like it more if I made it myself, adding flavors that appealed to me. Making your own mayonnaise is not difficult, nor does it require special equipment or unusual ingredients. I must warn you though; it may be life altering (as I seriously consider eating this by the spoonful) because any homemade mayonnaise is so much richer, silkier and flavorful than what you can buy. Note: I included my new favorite garden herb, sweet mace, which has a indescribably appealing anise flavor. Feel free to substitute your favorite herb of choice.

    I feel like Joey from Friends when I say this (am definitely not trying to), but a good sandwich is really a fantastic joy. I never expect as much from sandwiches as I do from other dishes, but in that error often comes the most wonderful of surprises: a really, transcendentally good meal. The Cuban at Chez Henri in Cambridge, MA, comes to mind, as does the Bacon, Avocado with Arugula Mayo at that food truck in Newberg, OR. But I digress. The bottom line is that a good sandwich kills. You know what else rocks? Ataulfo mangoes. Since honeymooning in the Yucatán, I have been beyond obsessed with these little guys which are infinitely better than their mango peers. I'm looking at 6 right now on my counter, and that's just in my line of sight. Anyway, long story short, mangoes + sandwiches long held my interest but they needed the right "glue" of salty-bitter-cheesy. Thusly, this sandwich was born. It's a seasonal fave!

    I took a regular method of baking chicken and added my own twist to it. Very simple and delicious. I think that the mayo is what makes it moist. Be careful not to over season with the Adobo because you can oversalt your chicken. If you can't find Goya Adobo, feel free to use Season All. I buy whole cut up chicken to save time. I preffer to use the organic mayo (central market organics) because the taste is VERY different from regular processed mayo.

    Lunch time is home alone time for me. That’s when I can let loose with different flavors and aromas that my family wouldn’t, um, appreciate for dinner. Like stinky fish. Which I love. This dish came about one day when I was searching for what to have for lunch and nothing in the fridge was inspiring. So I opened the cupboard, grabbed a can of tuna and a can of anchovies, and thought “Yes, tuna salad!” Saw the jar of chutney and grabbed that, too. Added a little mayo to bind it all together. Delicious. I used leftover pieces of bruschetta, but you could toast up an English muffin, which would be real nice. Also good on Triscuits, which are slightly addicting, so be careful. I’ve since made this dish using some diced onion, diced tomato and fancy Italian oil-packed tuna, but much prefer it plainer and with the water-packed cheaper stuff. Go figure. This would make a great quick appetizer for when you invite your stinky-fish-loving friends over for dinner.
