Chicken tacos can be made in many different methods, I like my tacos soft, flavorful and bit spicy. Believe me, there are days I do crave for those calorie packed greasy tacos, but when you can alter the recipe without losing the flavors, I would take the healthy option. You can make this recipe at home with left over grilled chicken/ vegetables and some seasoning spices. When you rub the chicken with chipotle and cumin powder, not only it adds the heat but smokier flavor to the dish.If you are not used to the ‘heat’, I would recommend to go easy on the Chipotle powder or substitute for Ancho chili powder. The difference between Chipotle and Ancho powder is that they are from two distinctive peppers; Anchos powder is made from dried, poblano and Chipotle powder is from dried, smoked jalapenos. I also added roasted red/yellow bell peppers as well as Brussels sprouts to bring in the sweetness and buttery avocado cream to smooth out the dish. Now if you are thinking what I am thinking, how to pair this delicious tacos with a good bottle of wine, the general rule of thumb is that spicier the food, the colder and sweeter the wine should be. I would go with Dry Rosé or if you are a red wine fan like myself, Spanish Grenache would be perfect for this dish.     Whether butter chicken appears on your menu on a regular basis or not, you’ll want to give this recipe a try. Traditionally made butter chicken, like many comfort foods, usually requires a serious time commitment to be made well at home. That’s not the case with our instant-pot butter chicken! Use the counter top pressure cooker to develop the same deep, flavorful curry in 35 minutes instead of hours of simmering. This recipe is a real game changer and is sure to be added into your regular dinner rotation. Share the recipe with friends and family on Facebook, Pinterest, Instagram, and Twitter. Begin by melting the Cabot Unsalted Butter and sunflower oil together in the bowl of the instant-pot on the sauté setting. Add the diced onions, stirring to coat and cooking until fragrant, about 1 to 2 minutes. Add the 1½-inch chicken tender pieces and stir. Cook until the chicken is opaque, approximately 10 minutes, stirring frequently.  Next, stir in the minced garlic, curry powder, red curry paste, garam masala, ground ginger, cardamom pods (see note below), and tomato paste, stirring until fragrant and everything is evenly distributed. Turn off the instant-pot and stir in the unsweetened coconut milk until a smooth sauce forms around the chicken. Fix the instan- pot lid in place, set the top knob away from vent and manually set the pressure to HIGH for 10 minutes. When the cooking time is up, carefully turn the knob on top to “vent”. Remove the lid and remove the cardamom pods. Stir in the Cabot Plain Greek Yogurt until you have a smooth sauce. Serve the butter chicken over hot cooked basmati rice and garnish with fresh cilantro leaves, if desired. Note: To make it easier to remove the cardamom pods after cooking, you can add them to a little square of muslin tied with kitchen twine or to a fillable tea bag. This recipe was just voted best tandoori chicken in San Francisco by our &quot;completely unbiased&quot; review panel (consisting of several friends who have haunted San Francisco's Indian restaurants with us for the last few years!) Seriously, if you like Tandoori chicken, you are going to love this one -- and it's easy, on top of that... The quantities below make enough marinade for 4 generous servings -- we usually make a package each of 6 drumsticks and 6 thighs, but it would work equally well for a breast and leg quarter each for 4, as well.

    This won the Burger Bash one year at The South Beach Wine and Food Festival so you can feel like an absolute winner making this at home! The cheesy sauce is a great addition to a burger and makes serving this easy with crispy chips, fries or even crunchy raw vegetables on the side. The cheese sauce and pretzel bun give the burger the pub vibes. You can grill the burgers or sear them in a skillet if easier. Buy meat that has a little fat in it (though not a ton is necessary) and great beefy flavor. A winning burger is a lot about the meat itself…I like a really fun recipe like this that has a lot of little moving parts. Most can be made in advance so when the moment is right, you cook, assemble and devour!

    Split-Pea Soup is a long-time, comfort food in my home. Upside to this recipe: its super easy , tasty and freezes really well. Downside: prep-time is a snap but the cook-time itself is really long...but happily it requires no babysitting once you put the lid on so you can attend to other things around the house. Recipe is large, but can easily be divided in half. I make it large so I can freeze the leftovers in single-serving ziploc sandwich bags--once frozen flat they stack easily and will keep in the freezer for several weeks. You can use crock-pots as necessary or preferred. Leave out optional garnish and its suitable for our vegan friends, too. :o)
