    When Gemma Stafford was growing up in Ireland, her mom always had a cake or crumble on hand just in case someone dropped by for a cup of tea and a chat. Like many traditional Irish desserts, her mom’s weren’t particularly complicated: What made them so good were ingredients like Irish butter, rhubarb from the garden and sour apples picked from a tree near the house. “In Ireland, everything is local,” the chef says.     This Thanksgiving I had planned to make a Pumpkin Pie and a Sweet Potato Pie, along with a Concord grape Pie, a Quince Apple Pie and a Sour Cherry Pie. However, time was shorter than I had hoped it would be and I found a recipe that would combine the sweet potato and pumpkin into one in Regan Daley's The Sweet Kitchen. This is a simplified, speeded up version of her lovely recipe. It is really a pudding baked in a pie shell. It tastes of the vegetables, not too spicy or sweet. You will also have the fun of deciding what to do with your leftover pumpkin or sweet potato if you have some.

    Perfectly seasoned ground beef and cheese between two crispy flour tortillas, with a fresh pico de gallo salsa, is what this dish appears to be...until you take a closer look. Chopped walnuts and chocolate stand in for the beef, colored shredded coconut takes the place of cheese, and strawberries, apples, and kiwi make up the salsa. Strawberry jam “pizza sauce”, blueberry “olives”, and whipped cream “sour cream” round out the pie. Your guests will be fooled, but they won’t be mad!
