    I came across this recipe about three years ago on TOH's website. It originally called for 10 flour tortillas (6 inches), but I found my alteration to the recipe to be much better. I have also substituted on occasion pintos for black beans, and used Pace Picante sauce instead of the salsa. This recipe has become a staple at my house.

    When my DH and I were first married I made this for him. He thought this was the most VILE tasting stuff he had ever had, and I was to NEVER make it again!. I was so suprised our marriage wasn't annuled. As you can see-I did make it again (nearly 20 years later), but only so I can enjoy it, and post it here. My DH smirked at me and did some eye rolling when he saw me preparing this, and knew that I wouldn't dare pack it in his thermos. As a child I grew up on a farm-every animal imaginable, 17 acres or so of blueberries(child labor), and of course a huge vegetable garden(more child labor). My mother being the thrifty sort thought this up and we had this frequently. Cheap meal for 6 children. One of those 'Back to the Basics' recipes. No measuring is really required. This is at its Absolute BEST with fresh green beans, and beautiful squeaky new potatoes(with the skins left on). Of course this can be made with canned or frozen green beans, or canned potatoes. Easily made for 1 or 2 or for potlucks.

Skip the usual simple salmon recipe and swap in this Gochujang Glazed Salmon with Carrots and Bok Choy. If you’re unfamiliar with gochujang, it’s a Korean fermented red chili paste that’s sweet and salty with some underlying spice and umami. I was first introduced to this in culinary school and I immediately fell in love with all the flavors of this condiment. It's been a staple in my pantry ever since. Just something to keep in mind while working with salmon is, make sure you are sourcing from a trusted and sustainable seafood purveyor. Remove all pin bones using a fish tweezer before baking and wipe any leftover scales with a wet paper towel. Cooking salmon is easy but common to overcook, causing the fillet to be dry. Baking the fish for 25 minutes at 375°F is ideal and yields perfect results with a soft flaky center.     This is one of the most delicious vegetable soups I have ever had. It's not your typical veggie soup. It's very filling and good for you. I have also used frozen peas, asparagus, and cauliflower in this recipe, so play around with it with different vegetables. I haven't had any that I didn't like with this broth. It makes a very large pot, so for a smaller family you may want to halve it. I have a family of 10 and there's usually a little bit left over. I serve it with rolls so all the food groups are covered. The cooking times are approximate and may very depending on your stove -- so pay attention to when your veggies are cooked. Stir often so you don't scorch the broth after adding the milk, cheese, and mushroom soup.
