The best apples I've ever used for pie are Honeycrisp. Simply amazing. They aren't as soft as macintosh (I hate how mushy those get in pies) and they weren't nearly as tart as granny smith. On a somewhat related note, I think Macintosh apples are terrible for eating raw, and only barely tolerable in pie. 6.
