    Use up your ripe bananas that are starting to look a little too brown to eat with this recipe for homemade Banana Muffins. Incorporating crushed cornflakes into the muffin batter, these muffins have a slight crunch in each bite. Bake time for these muffins is 30 minutes. Sprinkle with powdered sugar before serving. You can also add chopped nuts such as walnuts to add an additional flavor and texture element to these muffins. Serve for breakfast or as an afternoon snack.

    These little gems are very easy to make. I started baking this recipe when my kids were in elementary school and they loved those mini brownies that you can buy 5 to package (Hostess, I think) in their lunch boxes. I didn't like buying them so I found this recipe and the rest is history. I have never gotten 40 muffins out of this recipe -- more like 32. I don't always put a nut on the top of the brownie bites. I used pecans in the picture because that's what I had -- use your favorite nut.

    So I told the kids we were having pudding for dinner and their eyes lit up. Then they saw that it wasn't the pudding they hoped it would be, and that little glimmer of 'she's really gonna let us eat dessert for dinner' hope faded. Then they took a bite and their eyes lit up again. Then there was another bite, then another. The tropical flavors took over their little taste buds and we had a "everyone cleaned their plate (bowl)" kind of brinner! I only teased them because I knew they were going to love it! Pudding at our house is made with avocados. We have 2 dairy allergies, so pudding is a no-go generally. Unless I make with avocados. Trust me, they'll never know! Rice pudding is usually a big hit and this recipe was...the boys (including the adult-boy) all loved the mangoes and I knew they'd love it! I have a couple of helpful recipes: How to Bake Brown Rice & How to Choose and Cut a Mango that would be helpful with this recipe. As one last note...I used coconut extract to make this and really think it helped the flavor "pop." I keep it on hand because I like to add it to banana bread or muffins when I make them...half vanilla extract/half coconut extract...so if the banana bread recipe calls for 1 teaspoon vanilla, I do 1/2 teaspoon vanilla, 1/2 teaspoon coconut. I'm weird and that's how we like our banana bread. That being said, I've made plenty of rice puddings without the coconut flavoring and they are great too. I just wanted to play up the toasted coconut flavor, with the coconut extract. Your call on how you make yours. Enjoy!!!

    If you’re wondering how a recipe with smoked sausage, beans, cheese, and chili powder got the name cowboy pie, then we have a brief food history lesson for you. Shepherd’s pie is a classic mashed potato and meat dish originally from the UK. Traditional shepherd’s pie was made with lamb, which shouldn’t come as a surprise to anyone who knows what a shepherd is (a herder or “sheepman”). When the recipe crossed the pond, it became more Americanized and lamb was swapped out for beef. As it circulated further inland and south, even more iterations were made to the recipe, especially when it arrived in southern kitchens. As more ingredients were retired (like Worcestershire sauce), a slew of new ingredients was added to the dish, including black beans, Jack cheese, and corn muffin mix. These additions gave the recipe new life. Today, cowboy shepherd’s pie bears so little resemblance to nouveau or old-fashioned shepherd’s pie, that “shepherd” was completely dropped from the name of the recipe. Cowboy pie has taken on a life all its own. For our cowboy pie recipe, we personalize the dish even more. We suggest using black beans, tomatoes and Hillshire Farm smoked sausage, made with pork, turkey, and beef. These ingredients are distinctly southwestern flavors. Plus, garlic, chili powder, and jalapeno add a dash of heat to each bite. Since this cowboy pie recipe evolved so much, there’s no reason why you couldn’t make your own tweaks.     Delicious muffin-like snacks -- eaten hot or cold -- or warmed up as a side dish. Fantastic for busy times and guests, as they can be made ahead, kept in the fridge, heated up and served with other goodies on a platter. Also nice served with a tomato salsa with a bite, or plain with grated Parmesan cheese. Recipe from a great Mediterrranean-type restaurant in the Winelands of the Cape, called Olivello -- but as usual I tweaked it a little.

    Once again, the fine folks of Southside Christian Church have served as worthy taste testers for my latest recipe. In this case, I placed a couple of plastic containers full of these little gems in the narthex. I share my concoctions there for 2 reasons: 1. My S.O. and I don’t need the extra calories attached to our behinds. 2. The one thing I can count on with the fine folks of Southside Christian Church is a definite opinion! By the time I finished my postlude and reached the narthex area, the plastic containers were completely void of content. When I asked for opinions, all I got was the sound of licked fingers and smacked lips. I took that as taste tester code for success. So what are PB & J Caramel Chewies? Well, I started with the basic recipe that I use for my Christmas Wreaths and Easter Egg Nests, and added some pretzels. Why pretzels? I included them because the 2 ingredients for our Behind the Curtain Dessert Challenge this month are pretzels and caramel. So of course Chewies came to mind! I figured the pretzels would be just enough salt and crunch to complement the chewy peanut butter caramel. And I had been thinking about doing some kind of PB & J variation of them here lately anyway. But I didn’t want to put any ol’ jelly in the middle; I wanted a fresh strawberry jammy-like filling. The next quandary was the shape. I wanted it to be small enough for a person to pop in their mouth in one bite; but it had to be a vessel that could house some of that beautiful ruby jeweled jam. When I tried to create the cups free-form on a cookie sheet, it was a slow process. Time is of the essence when it comes to making Chewies, because the mixture sets up rather quickly. So I grabbed a mini muffin pan, threw a hunk of the caramel mixture into each cup and gave it a quick dimple with the handle of my wooden spoon. It worked! After letting them set for about 30 minutes, I was able to fill each cup with the strawberries. The only thing left was to wait for the test results at church. Hallelujah, they passed the test!
    Mint Chocolate Chip Cheesecake Bites (Freeze-Ahead)

    A nice step away from those pre-made frozen cheesecake bites. It involves premade chocolate-chocolate chip cookie dough as a graham cracker crust simply does not do this justice. You will need mini-muffin tins to do this, they usually hold about 12 mini-muffins and the recipe yields 48. And yes, 1/8-tsp spoons are actually made! You can find them at Family Dollar. If you don't have this size or a sliding spoon to use, about 10 drops will equate to 1/8 tsp. Peppermint is very strong; a little goes a long way.
