You do map completion when you feel like it. No matter what, you will wind up being overleveled for maps when going for 100% completion; the process grants way more than enough exp to hit 80 by then, and that was before the adventure guide added significantly more exp.
First get you someone with the turtle mount who has 100% map completion and let them teleport you to every waypoint in core tyria. This takes them >30 min and gives you a good base to start with. I asked someone from my guild who was nice enough to do it.
