    Extra Easy Spaghetti and Meatballs
    Yummly
Easy clean-up, big flavor. For this streamlined, sheet pan version of the classic recipe, you’ll cook juicy homemade meatballs in the oven instead of browning them in a pan. Then just add jarred marinara sauce to the sheet pan to heat while you boil pasta on the stove. Finish the dish with fresh basil for authentic flavor. Tip: You can double the meatball part of the recipe and freeze a batch of raw meatballs to cook later. Defrost them overnight in the refrigerator before proceeding with the recipe. Enjoy this classic Italian favorite any night of the week. The sauce tastes like it’s been cooking for hours, but simmers for only 30 minutes. Like a lot of sauce? Feel free to double that part of the recipe. You can also make the meatballs ahead of time and freeze them. Easy Sofrito

"This is the one indispensable, universal, un-live-withoutable recipe. Having said that, it is incredibly easy to make with ingredients you can find at the supermarket. And if you can’t find all the ingredients I list below see the note that follows for a very simple fix. What sofrito does is add freshness, herbal notes and zing to dishes—you can do that with the onion, garlic, bell pepper, cilantro and tomato alone. In my house, sofrito makes its way into everything from yellow rice, black bean soup, sauce for spaghetti and meatballs to braised chicken and sautéed shrimp. Not only that, it freezes beautifully, so in about In 10 minutes you can make enough sofrito to flavor a dozen dishes. I’m telling you, this stuff does everything but make the beds. You will change the way you cook. I guarantee it." ----Daisy Martinez
    Oh Meatballs!, Oh Meatloaf!
    Food.com
This recipe can be made as a meatloaf or meatballs and is from Bird's dear old dad. with a secret ingredient (soy sauce) that no one will even taste or believe is in the recipe. The blending process is against traditional methods of lightly mixing the meat but what do experts know?, they said eggs were bad for us at one time, lol. My dad's method makes this the most tender, moist and delicious meatballs or meatloaf you will ever eat. The ketchup topping is simple, and the oven thickens it and makes a tangy sauce that there is never enough of as everyone is always wanting extra. The meatballs freeze well for leftovers or OAMC. You can just pull out any number of frozen meatballs for use in later dishes such as with a Bechamel sauce for an easy Swedish Meatball appetizer, or for spaghetti, or Meatball Parmesan hoagies, or...
    Mary's Lasagna
    Food Network
The way to George's heart is definitely through his stomach. The E-Z Pass is with spaghetti and meatballs. We make several different sauces for our meatballs but none is better than the recipe we learned from George's mom, Mary Germon. Like most Italian-Americans, she called her sauce "gravy" and it was part of every holiday feast and any Sunday dinner. She sauced spaghetti or homemade ricotta ravioli with this gravy. It is also the first step to making Mary's Lasagne, another of her specialties. Mom had her own business and worked more than 40-hours a week. She was one of the original multi-taskers often doing the week's laundry and ironing at the same time as preparing a meal for the family. She had this gravy put together and bubbling on the stove in no time flat--something George always reminds Johanne when she frets and fusses over it. This recipe makes a large amount of sauce, but it takes no longer than a small batch and it freezes well. Save what you don't use for Mary's Lasagne, Ricotta Ravioli, or insurance in the freezer for an impromptu meal.
