    This is a recipe I created out of a need for a healthy low fat, high fiber breakfast option. This "cookie" is not very sweet. You can add more sugar if desired. Makes a great breakfast with a piece of fruit.

Each one weighs in at just 0.0044 grams and is packed with vitamins, minerals, natural oils, calcium, iron, magnesium, phosphorous, manganese, copper, zinc, fiber, thiamin, vitamin B6, folate, protein, and tryptophan. Organic sesame seeds can aid in cancer prevention, bone health, improved digestion and skin, oral health, are anti-inflammatory, and the list goes on. Perhaps I don't need to spell this out for you, but chocolate chip cookie + sesame seeds = a recipe that you can feel good about eating any time of day, all the time, because, you know, health reasons. When I'm baking with a traditional recipe that calls for butter, I generally don't substitute for a lighter ingredient. My feeling is that it's not the cookie recipe's fault if I eat more than one in a sitting, and said cookie shouldn't have to lose its cookie integrity just because I have no will power. Recent studies have shown that even butter, in moderation, does not pose the threat to cholesterol previously thought. Give me single ingredient butter any day over chemically compounded margarine, and give me half as much. This recipe has been in my husband's family for over fifty years, and I'm particularly fond of it as a interesting alternative to the every-day chocolate chip cookie. Try experimenting with coconut oil in place of the butter/margarine, or substitute a vegan flax seed alternative for eggs. You can also swap all-purpose flour for whole wheat or almond, and carob chips for chocolate. The possibilities are endless- make it your own and share how it went in the comments!

    When I decided to post this recipe I thought there must be several oatmeal cookie recipes already posted. I was right! I went thru 235 oatmeal cookie recipes already posted but none of them, I found, have these same ingredients. These are truly delicious, moist and chewy oatmeal cookies. And you can interchange the baking chips. Try them with white chocolate chips or peanut butter chips. This recipe makes 6 dozen cookies but bake half and freeze the other half for another day. I lay out film wrap and roll part of the prepared dough into logs and then wrap again in foil. Freeze until ready to use and then slice and bake.

    These are simply the best oatmeal cookies I have ever eaten. I originally found the recipe on "The Kitchn" awhile back, and thought these are good, but I know they can be better. I used some prior knowledge from "Cook's Illustrated's" chocolate chip cookie recipe and combined it with "The Kitchns" to make an oatmeal cookie that will out do anything you've ever had before. "I guarantee it."

    This is one of my favorite chocolate chip cookie recipes. I first tried them in my college public speaking class where students had to give a demonstration speech. A student demonstrated this cookie recipe and blew our minds because of the secret ingredient. Well, the secret is that they have chickpeas in them. You can’t taste them but it provides a nice fluffiness and lends itself to a more filling cookie along with oats. Now the chickpeas don’t replace any of the other typical ingredients in a cookie it simply adds more fiber and protein. When I make these cookies, I tell everybody to try them before I tell them what’s the special ingredient is, everyone seems to be pretty blown away when they find out there are chickpeas in them. You can tell the texture is a bit different, but you can’t really tell why. These chocolate chip cookies really are more like an oatmeal cookie meets chocolate chip cookie with some chickpeas just thrown in there.

    Every time I make this cookie, I think of my Grandpa. It was his favorite cookie. He loved anything with coconut. I think I got this recipe out of an old church cookbook. I have made this cookie for nearly 30 years. I'm not sure of the amount of cookies this recipe makes. I never really count them. I think I can get about 3 dozen. It all depends on how much cookie dough you drop off of your spoon.
