This mod allows you add AI goals to Minecraft Mobs to make them able to attack, request aid, leap or shoot objects at you. By default the mod comes with 3 config options "angryAnimals", "angryReinforcements" and "aggressiveAnimals". By enabling "angryAnimals" it will make all vanilla animals attack you back when you hurt them.

It's possible with entities that have the NBT-Data-Tag (or however exactly you call that) "AngerTime". These include mobs like the Polar Bear, Endermen or Wolf (Untamed). You can check if a mob has this NBT-Data-Tag using the command /data get entity @e[type=(The Mob),sort=nearest,limit=1] AngerTime

To target all entities, you would have to run /execute as @e[type=!minecraft:player] run attribute @s .... minecraft:generic.attack_knockback only affects Ravagers, Hoglins, and Zoglins. There is no vanilla way to modify a non-Ravager-type mob's knock back without an item.
