From what surmise it sounds like you: block when you know a hard hit is coming and you don't have time to otherwise remove yourself from the damage, as well as putting the attacker off balance; dodge when you don't have time to leave a hard hitting aoe; and interrupt when you know the ability is something that should be stopped, as well as putting the attacker off balance.
