    Tomato Sauce is quite a wonderful thing. You can do many things with it; top a Frittata with a bit of Pomodoro and Parmigiano and you’ve got a tasty little meal. You need a cup or so of tomato sauce to make Caponata and to add to many Italian recipes. When you have a Tomato Sauce already made, you can make many other Pasta Sauces simply by adding different ingredients. You can make Pasta with Zucchini or Cucuzza (Googootz) by simply sauté some Zucchini or Cucuzza (Large Italian Squash) in olive oil with garlic, salt, and pepper, adding tomato sauce and you have a couple new sauces right there. Sauté some Mushrooms, add tomato sauce and you can make Spaghetti con Funghi. To make the famous Sicilian dish Pasta alla Norma you sauté Eggplant in olive oil with garlic, add “You guessed it,” tomato sauce, cook your pasta of choice, toss it with the Eggplant and Tomato Sauce, grate some Ricotta Salata over the top, and you’ve got a classic plate of Pasta alla Norma. All these tasty dishes because you’ve learned how to make Tomato Sauce. Get my drift? “Capece?” And that’s not all. When you have some tomato sauce on hand, you have the base for such wonderful dishes as; Eggplant Parmigiano, Veal Parm, or Chicken Parmigiano. You’ve got your tomato-sauce, all you have to do is get some Mozzarella, Parmigiano Reggiano, and boneless chicken breast.     My best friend showed me this slow cooker marinara recipe, and I just had to share it. The spices in here can all be adjusted to taste (and eyeballed), but this is how I learned to do it. The best flavor calls to cook it all day, but it can be made in a pinch if you have to! Serve over your favorite pasta or with crispy chicken. Can also be used in lasagna or ravioli.

    The fact of the matter is, I have never made chili before. Before this, I was only vaguely aware of the rules surrounding the dish—beans vs. no beans, what cut of meat to use, what variety of chili pepper….and so on. I arrived at this recipe the same way any self-respecting nerd would have: I read everything I could get my hands on. I read J. Kenji López-Alt’s “How To Make The Best Chili Ever,” where I learned that there are a plethora of chili peppers, but not all are created equally when it comes to chili brewing. I read Smittenkitchen’s handful of recipes on the subject, and learned that adding a little cocoa powder helps deepen the flavor. Finally, I asked my Aunt Martha (of Cranberry Cake fame). She told me to sauté the aromatics in rendered bacon fat and suggested I throw some lamb into the mix. She also recommended the goat-cheddar topping, which suits the chili marvelously. Here are some things I learned on my own: using canned beans does not make you a bad person. Also, chili splatters when heated. Maybe this doesn’t surprise you? If you are cooking with no pants on, it is possible you will get burned, and then feel like an idiot. You’ve been warned.

    Today I thought I would share this simple mozzarella salad recipe just to show you guys how I use mozzarella in various ways. I do love it with the classic red and sweet juicy tomatoes, along with fresh vibrant basil but I decided to use my garden produce this time and I only had green tomatoes (as I think it’s a bit too cold now for them to turn red!). So, below is just one extra way in which you can serve and combine fresh mozzarella. I used Burraduc Farm mozzarella…as you’ve probably seen I do get their dairy produce all the time. The reason being, not only are they our good friends, but they also are extremely passionate about running a very sustainable dairy farm with caring for their buffaloes as the main priority. Their mozzarella is made in their cheese room with fresh milk produced right there on the farm. This salad would be lovely as part of lots of other share plates, or with some roasted chicken, grilled seafood and so on!

    What is dirt cheap anymore? Inexpensive or economical and feeds many, I recall a big pot of bean soup going a long way to feed a big family on a skinny budget. Without a doubt I immediately go to "beans" and a big pot of pasta fagioli for my cheap but wonderful dinner for eight. Beans because I heard how cheap they were in the Great Depression. Today is sausage making day and the soup is on, no time for anything fancy here today. I have to have something ready for the two day process and this is one of my go to recipes. I would love to say that this is a family recipe and it is, mine, I didn't have the advantage of growing up with my Italian relatives so I don’t know what their recipes are and dad was a sailor you know so we spent little time with relatives. When he cooked, he threw in elements of what he remembered on his plate and in his bowl. He was a good cook; I miss his face and his food! Then again I would love to give credit to my mother and her version I do, a slight nod, for adding cabbage and calling it cabbage and beans to serve 7 of us. Over the years to create a more expensive version and fancy things up a bit for a company dinner, I added chicken and/or beef broths, still economical because I make my own stocks and broths and freeze. Select greens and garnished with pesto. My notes later in the recipe mention other additions, not necessarily budget friendly. Great for a casual dinner, serve a fresh loaf of bread and a salad. Most definitely better the second day.

    In a large bowl or ziploc bag, mix the chicken and chicken ingredients together to marinate in the refrigerator for at least 30 minutes (or overnight, if preparing ahead).
    Pour olive oil into the bottom of your baking dish. Place the tomatoes ingredients into the bottom of your dish and toss to combine. Lay the chicken across the bed of tomatoes.
    Top the chicken with the shredded mozzarella cheese and season with salt and pepper to your liking.
    Place the thyme sprigs on top of the cheese and bake in the oven for 35-38 minutes (or until the internal temperature of your chicken reaches 165 degrees).
