You could keep them in your inventory or put them on display and you could mix up different types of potions. Mixing potions came with the side effect of diminishing rewards (so if potions had an effect level higher than 1, it would be reduced to 1, and they'd last a third of the time of the original potion) and mixing more than 3 potion types together would create a "spoiled potion".
