Virtual desktop lets you use steam vr. So you can buy steam games and run them on the quest. Steam offers a vr compatibility check, make Sure to run it. I only use virtual desktop via WiFi i dont know if you can use it with a cable. But for WiFi you need at least a 5ghz Router.
I'm not sure how to run Steam games without SteamVR, however the problem you are having might be solved by running a stripped down version of the Oculus service since it can't be disabled. I followed the tutorial here and Steam games do run better for me.
This^ in the oculus pc software you have to go into the options and set the oculus software as the default openxr api. Then also enable "other sources" and add you steam games to it. Steam vr won't even start up. Most games are written for Oculus or OpenXR, so you shouldn't have many problems.
