You could always write your paper notes in LaTex after your lectures. It could be a way to better understand the material. As for note taking methods, a combination of outlining with Cornell is a good combination and I should think is suitable to all three subjects you listed.
If you want to take notes I suggest you get a nice notebook, use a white board to help with homework problems, and find a good medium to share your notes with other students such as google drive or one drive.
