If the game notifies you that a mod requires a certain Forge or Fabric version to run, you can easily set that version for your modpack/profile custom through the 'Profile Options': Once you select the required modloader version, click 'Done' and launch the game again.
Select the mod loader version you want from the dropdown. Play! If you need to update to a new game version, a new profile is required.
In CurseForge, click View Profile on the modpack, and open the menu beside the Play button. Then click Profile Options. Scroll down to Current Modloader Version. You should be able to locate the desired version in the list.
Scroll down to the bottom of that window and you should see the option of the ModLoader as a drop down list. In that list you should be able to change the ModLoader version. Once changed it should automatically download it for you.

Open the CurseForge launcher and click the Minecraft logo on the left side of the screen. Right click the desired modpack, and click Versions . In the window opened, you can find all the modpack versions in the dropdown box, and information on the modpack’s changes.
