In order to nail my pull temp, can i insert my oven safe Thermapro thermometer into one of them and leave it in while it cooks, or will that mess up the seal the pastry provides or something?

Baked up some of Chef Ramsay’s Beef Wellington Bites! To be honest they just taste kind of like pot roast in a puff pastry. I give them 7 out of 10. I'm so distracted by picture 2 and the barbaric placement of these on the baking sheet.

Wellington is a refined, evolved version of that tradition. It's the culinary equivalent of calligraphy; something beautiful, refined but a little anachronistic. You get 90% of the goodness with 10% of the work by making a pot pie. 98% of the goodness with 0% of the work if you just go to Tesco and grab a sausage roll.

I want to do individual Beef Wellington minis, which I have done before, for friends. One of them is allergic to mushrooms though, so what can I substitute for the farce? Sweet potatoes? Pumpkin? Green asparagus? I want to serve it with German red cabbage and some kind of potato dish. Also been thinking about using deer instead of beef.

I was wondering if it would be possible to create an individual Wellington with Beef Medallions, and how a smaller cut of meat may effect the cooking process?
