it does in multiple ways. It puts in a load of compatibly mitigations to ensure the GPU behaves like the older AMD/Intel gpus. The fact that these titles are pre apple silicon means they also use Metal 1 or 2 and non of the newer features of apples GPUs.
With the new ray-tracing feature and a 10-core GPU, crisp character shadows and object reflections make for a spectacular gaming experience. I plan on using the iMac for my games on Steam, too, because things look way more promising than when I first tried gaming on Mac (and swore off it).
