TextEdit has a setting to use rich text or plain text. Never had a copy/pasting issue with it. There's also CotEditor (free) that I like a lot because of its simplicity and minimalism, while offering syntax highlighting for a lot of different languages and other usual features.
As already stated, TextEdit is the notepad of OS X (although a more powerful notepad that is). For more advanced stuff, TextMate (already recommended) is very nice. A nice free and famous alternative is Bare Bones's TextWrangler .
You can use macOS apps—such as Pages or TextEdit—or apps from the Mac App Store to create reports, essays, spreadsheets, financial charts, presentations, slideshows, and more.
