    This is my own recipe i came up with for chili, combining what i thought was the best parts of several standard recipes. This has good flavor but is not for those who like a thin chili or one with lots of veggies. This is a thick hearty version that relies more on seasonings than chili peppers, though if you really like them you can certainly add them in, especially if you like your chili really spicy. I'd say this is more of a medium spiciness that suits my tastes. Don't let the long list throw you off, it's mostly things that are easy to keep on hand :) Hope you enjoy it :)

    As a cookbook author and test kitchen cook, I make it my business to learn as much as I can about the recipes I test and develop. For instance, what makes a “chili” a “chili” and not just a stew? Some say it has to have meat and meat alone—such as Texas chili con carne—while others insist it must have beans. The quarrels can become quite heated, trust me. But I think it’s safe to say that everyone more or less agrees that a chili must have chile peppers (or chili/chile powder). And I agree. So, I am pointing to the chipotles in this dish and calling it: This recipe is a chili. This smoky, rich chili is one of my go-to weeknight dinners, and for good reason. It’s a one-pot dish that has 10 ingredients (not including salt and pepper) and comes together in just 30 minutes. Plus, you can make it a day or two in advance because it reheats beautifully. If that isn’t enough, it’s also relatively healthy—bacon adds plenty of smoky flavor, but also renders enough fat to cook the aromatics, that way there’s no need for any additional oil.So, give this recipe a whirl—keeping your mind open to what “chili” really is—and remember to not read the comments.  Slideshow:  More Chili Recipes

    This recipe developed over time and this did get rave reviews from my taster panel. This is a chunky version of chili and very earthy; chunks of beef, lots of beans, carrot pieces and sweet red peppers. The real key to the hearty flavor is the chipotle peppers in adobo for a spicy smokiness and the nice deep browning of the beef. Dishes like this are always a great prepare ahead meal as the flavors deepen and meld when allowed to sit for a while. If you're having company so easy to have all prepared and kept in a nice low 250 degree oven to keep warm until serving time. When you think of Super Bowl or snowy days, what could be better than a nice steaming pot of chili? I've been playing around with chili recipe ideas for a while and this one is hearty, flavorful, spicy but not so spicy that kids may turn their nose up at it. You can always make it spicier if you choose at the end or have hot sauce available when serving. Isn't that one of the best parts of from scratch cooking? It's to your taste! **Chipotle in adobo is sold in a small can and there will be leftover chipotle in adobo after making this recipe. Freeze in tablespoon portions and then bag or place in a tightly sealed container once frozen for easy use later. If you have mini muffin tins or old-fashioned ice cube trays which are perfect for saving for later use. Freezing will lot lessen the flavor of the peppers. Serve with some crispy tortilla chips on the side, either shredded cheese or even a dollop of sour cream per serving. If you want added spice how about some pickled jalapeno peppers sprinkled on top? Also some nice corn muffins, corn bread would be a great side too.
