He taught Transfiguration in the books. The film canon (including FB) is different from the books, which is why there are discrepancies like McGonagall teaching several years before she’s supposed to be born (she looks far older in the films, so I’d imagine that’s why they made that change).
The purpose of these lessons were to teach Harry about Lord Voldemort 's past in an attempt to figure out how to defeat him, further discuss the prophecy that caused Harry's destiny, and uncover an important secret of Voldemort's, guessed at by Dumbledore, that possibly involved Voldemort being immortal.
