The change from a liquid phase to a gaseous phase occurs when the vapor pressure of the liquid is equal to the atmospheric pressure exerted on the liquid. Boiling is a physical change and molecules are not chemically altered during the process.

Jul 11, 2023 · When water is heated to the boiling point, it reaches 100°C at sea level, and it transforms from a liquid to a gas, which we know as steam. This process of transforming from one state to another without changing the composition of the substance is called a physical change.
Evaporation only happens on the surface while boiling happens throughout the liquid. When a liquid reaches its boiling point bubbles of gas form in it which rise into the surface and burst into the air. This process is called boiling. If the boiling liquid is heated more strongly the temperature does not rise but the liquid boils more quickly.
Therefore, we define the normal boiling point as the temperature at which a liquid changes to a gas when the surrounding pressure is exactly 1 atm, or 760 torr. Unless otherwise specified, it is assumed that a boiling point is for 1 atm of pressure. Like the solid/liquid phase change, the liquid/gas phase change involves energy.
