CREATE A TEMPLATE PAGE: If I make a digital note structure I like, then I make a template of it to copy and reuse for note taking. AS FOR ORGANIZING.... Don't make multiple notebooks unless you are very subject specific or creating something to hand off.
I was in a similar place, i have a lot of handwritten notes and just figured onenote will work best for me. Another approach is to use onenote as a scratch book, and export stuff to obsidian through pdf or pandoc to get .md, but i just prefered onenote and stuck with it. Also side tip, use syncthing for syncing obsidian files between devices.
