The largest PvP servers are Benediction for alliance in North America, and Faerlina/Whitemane for horde. For PvE, I recommend picking either Pagle for alliance, or Mankrik for Horde. You should pick one of the large servers, because more players on the server means more opportunities to pug raids and dungeons, and a more robust economy.

Prayer of Mending is amazing and should always be used anyways. Prayer of Healing is not and should realistically never be used. Yeah sure if you wanna greed your heals go for it but than you are playing the class wrong. Stacking groups in such a way so the Disci can optimally spam PoH is not the way to go.
