  6. I haven't actually tried using the ribbed, but if you want an even sear, definitely the flat side. flat pan and clarified butter will get you the best sear. According to The Food Lab a grill pan is no replacement for an actual grill. It also wouldn't get the even sear that you would get with a flat pan. I use flat too.
