The reason blazes look like they do is that all the mobs are stuck to cuboid shapes, so I couldn’t make something more flame-like, but I wanted them to look magical, rather than them having arms and legs.
Like most mobs, they don't care about anything in particular. Passive farms tend to use their AI wandering behavior (mobs want to wander towards solid blocks) by putting them in a box of non-solid blocks (glass) with only one trap-doored exit, where they will fall into the collection chamber.
Basically, the Blazes adopted the mannerisms of the Wither Skeletons and the regular Skeletons that populate the Nether Fortress. This is because, being an artificial life form, the Blazes don't think for themselves, but only follow their orders.
