In simple terms, the reason typical mammals have two eyes is probably similar to the reason that cars usually have four wheels, the reason houses keep out the rain and why coffee cups have handles.

I’d guess it boils down to efficiency. When animals were evolving, nature figured out that two eyes work better than one, but three eyes is probably too much. Plus it’s easier to make information for the right side of the body and just flip it for the left half than to have two totally different sides.

Others, such as arthropods, can have many eyes (although insects usually have two compound eyes supplemented with more simple eyes).
Similarly, three eyes, four noses, or any combination exceeding two eyes, one nose, and one mouth has to really "carry its weight" in the body.
