I think there are two main reasons for the appeal. The first is the contrast with most isekai. It is not “you wake up powerful in a world made for you to enjoy.”. It is the mc becoming a powerful monster, and steadily becoming more detached from his own humanity.
The characters have power continuity, and they can't just do anything, but they can do a lot. And this power wasn't just given via dumb luck, it was earned through Ainz's and the other guild member's hard work, which is continually referenced throughout the show, but more so in the light novels.
I would highly recommend reading the Light Novel if you want to really enjoy overlord. The manga is to far behind and while the anime does a good job with main events it still cuts out a lot of details which is what makes overlord so deep and fulfilling.
