I also have a million silicone baking mats that are my fav thing to cook on. Sometimes it does give an odd smell but it shouldn’t be smoking. Silicone is usually heat safe up to a certain temp so make sure you aren’t passing that and it should be good. I find that if you put it on a baking sheet and cook it like that then it is better.
