The titular Joe (Carradine) is a bodyguard protecting a mafia don (Jose Calvo). Escaping an attempt on the don's life he steals a yacht belonging to Cyril Cusack and his bespectacled bookish daughter Danning. On route he recruits Italian fisherman Margherito (Skerritt) to sail the yacht.
