The reason the hand on the wall technique works with a maze like this is because it is made from one path, you can effectively trace your way around the whole maze in one go.
Multi layered mazes would work. The method works when the maze basically consists of 2 walls. When you can split the maze in 2 inbetween the right path. But having the maze split into multiple pieces that you need to run through in order to reach the goal would make it impossible to reach the goal by only using wall following.

Note that you won’t necessarily find the easiest or most direct path out of a maze, but you are guaranteed to find the exit. Trémaux’s algorithm essentially gives you the ability to test a larger number of paths, using a system to determine the ones that definitely don’t lead to the exit.
