In CurseForge, click View Profile on the modpack, and open the menu beside the Play button. Then click Profile Options. Scroll down to Current Modloader Version. You should be able to locate the desired version in the list. You just change the version and it will work. I still need help.
Forge and Fabric are the main modloaders. There was drama and the Quilt team separated from the Fabric team to start their own version of Fabric called Quilt. For now, Quilt supports fabric mods but Fabric does not (and cannot) support quilt mods. This is not the end state though so be aware that at some point Quilt may stop supporting Fabric mods.

From a user perspective, the "best" modloader is the one that your favourite mods run on. In general this tends to lead users to use Fabric for vanillaplus-like packs, and Forge for bigger, gameplay changing packs.
