There is an easier solution: Mojang could simply stop adding real animals and focus more on fantasy creatures. Fantasy games are full of realistic animal-like creatures that dont exists in the real world.

Most animals in minecraft aren’t really that interesting to me the monsters on the other hand are so unique and otherworldly. New ores would be cool like what if different gems were added and acted like diamond but different colours.
