Oct 1, 2024 · Once the dough has risen, scrape it onto an oiled or lightly floured surface. Flatten the dough out slightly and with your fists to create a rough rectangular shape. Start folding the dough in on its self from each side to create an oblong shape. Repeat until you have a tight and smooth top.

- Mix the flour, yeast and salt together in a large bowl. Make a well in the centre and pour in 300ml of the lukewarm water and all the oil. Mix vigorously with a round-bladed knife until the mixture comes together in a craggy, lumpy dough.
- Tip out the dough onto a lightly floured work surface and bring it together into a ball. Knead it for 8–10 minutes, until the dough becomes smooth and elastic (it should bounce straight back when gently pressed).
- Form the dough into a ball and place it in an oiled bowl. Cover it with a damp cloth and set it aside in a warm place for 45 minutes–1 hour, or until doubled in size.
- Turn out the risen dough onto a lightly floured work surface. Gently knead it two or three times – this is called knocking back and redistributes any large air pockets to give an even rise.

3. Mist the inside of the cover with water. 4. Slide the dough on to the baking stone, place the cover over the top of the dough and bake for 15 minutes. 5. Remove the cover and reduce the temperature to 220c / 430f and bake for a remaining 15 minutes or so. The loaf is done when it reaches a golden colour on the crust.

Add the water and mix with the dough hook at low speed until a rough dough forms, 1 to 2 minutes. Turn the mixer off, and without removing the bowl or the hook, cover the bowl loosely with plastic wrap.
