In Manakeesh, the za’atar blend is mixed with olive oil and spread onto the flatbread and then baked in brick oven. I just came back from visiting Lebanon a couple of weeks ago.

Sep 23, 2020 · Traditional Lebanese Za'atar bread (aka manaqish, manakeesh, or manakish) is an incredibly tasty Middle Eastern flatbread made with toasty za'atar seasoning of roasted thyme, oregano, sesame and sumac. This savory rustic tart is baked with olive oil, fresh lemon juice and an incredible spice blend of roasted Mediterranean herbs.
Prepare the dough: In a large bowl, mix both flours, the salt and sugar. Add the oil, yeast and 1 cup water, and knead in the bowl with your fingers. Gradually knead in another ¼ cup water, then knead in more water, 1 tablespoon at a time, until the dough comes together into a somewhat sticky ball.
