They're all related, but the first one is this: Why build an AFK platform so far above the mob farm (starting around 10:39 in the video)? It seems an inordinately high risk for something that's apparently intended to be a survival-friendly mob farm.

bedrock had an issue where mobs tended to spawn in, but then never despawn. so the problem is a mob spawns outside your farm and they are there for the long haul. they never despawn, and they never give an opportunity for a new mob to spawn in the farm. over a long enough timeline, more and more mobs spawn outside the farm and it reduces the rates.

But the mob cap should be the main problem, it does increase with the number of loaded chunks but if other players are near dark caves and not hunting mobs then the caves will fill with mobs and the mob farm will use up the mobs that spawn there.
